Bolivia produces 'Royal quinoa' (Chenopodium quinoa var. real) from the Salar de Uyuni area. These larger grains carry premium prices. All food-grade quinoa requires thorough washing to remove saponins, the naturally occurring bitter coating that makes unwashed quinoa inedible.


Quinoa Origin and Supply

Peru dominates global quinoa exports with approximately 50% market share, primarily from the Puno region at 3,800 metres altitude on the altiplano. Bolivia represents the traditional quinoa heartland, producing Royal quinoa in the Salar de Uyuni area with larger grain size and premium positioning.
