What are Apricots?

Apricots (Prunus armeniaca) are small, golden-orange fruits prized for their delicate sweetness and subtle tartness. Belonging to the Rosaceae family, apricots are a staple in many culinary cultures worldwide. Their soft texture and aromatic flavor lend themselves to a wide range of applications, from confections and jams to savory sauces and health foods. Hence they are frequently paired with figs, dates, or raisins in snack assortments and bakery mixes.

Types, Varieties & Forms of Apricots

Dried apricots are processed and packaged in different formats to meet specific market needs:

  • Whole Dried Apricots – Soft, chewy, and ideal for snacking or direct use in baking.
  • Halved Apricots – Split fruits commonly used in trail mixes, desserts, or stews.
  • Diced Apricots – Small, cubed pieces suited for cereals, granola, and baked goods.
  • Apricot Paste – A smooth, blended format for sauces, fillings, or confectionery applications.

There are basically two ways of further processing: sulfured and unsulfured.

  • Sulfured Apricots – Treated with sulfur dioxide to retain their bright orange color.
  • Unsulfured Apricots – Naturally dried with a darker hue, preferred by clean-label and organic markets.

Please note that sulfured apricots can not be organic due to their treatment.

Harvest Season of Apricots

Apricot harvesting takes place in late spring through early summer, with variations depending on the origin:

  • In Turkey, the primary harvest season runs from May through July, especially in the Malatya region.
  • In the United States, harvesting peaks in June, predominantly in California.
  • In Iran and Italy, the season also spans May to early July, depending on regional climates.

Timing is crucial, as optimal sugar and moisture levels determine quality in both fresh and drying applications.

Producing Countries

Apricots thrive in warm, dry climates with cold winters for proper dormancy. The leading producers of dried apricots include:

  • Turkey The world’s largest producer of dried apricots, with over 750,000 tons of fresh fruit grown annually in Malatya, contributing over 85% of the world’s dried apricot supply.
  • Uzbekistan – Produces 300,000–400,000 tons of apricots yearly, much of it sun-dried and exported.
  • Iran – Known for rich-flavored dried apricots and apricot kernels, especially from Khorasan.
  • Additional producers include Afghanistan, Pakistan, Italy, and China, supporting both domestic and export markets.

Apricots have been cultivated for over 4,000 years, with roots tracing back to Central Asia. Their global popularity grew along historic trade routes into Europe and the Middle East. Today, their appeal is boosted by demand for natural snacks, artisanal preserves, and functional ingredients.

Dried apricots are seeing strong growth in the clean-label, health-conscious, and convenience food categories. Increasingly, food brands are also using apricot paste in bars, sauces, and plant-based confections. Premium and organic formats have gained popularity in Europe, North America, and Asia.
