Enterobacteriaceae in Food

Enterobacteriaceae are a type of bacteria that can be found in food that are known because of their ability to cause issues with the intestinal track. Enterobacteriaceae are able to cause a number of illnesses within humans, like meningitis, gastroenteritis, urinary tract infection, and pneumonia. Depending on the Enterobacteriaceae and the amount of the bacteria will cause major illnesses, while others will just weaken the victim.

Normally Enterobacteriaceae are found in the large intestine, however, they can also be found in foods that are contaminated or foods that are not properly prepared. In many countries around the world, there are limits on Enterobacteriaceae in food. The Enterobacteriaceae in food limits vary from country to country, however, Enterobacteriaceae being more than 100,000 per gram is not allowed in ready to eat foods. At the moment, most areas do not have limits of Enterobacteriaceae for fresh fruits, vegetables, or foods that normally have Enterobacteriaceae. 

Enterobacteriaceae in food and drink is what normally causes tourists to have diarrhea, as they are not used to the strain of Enterobacteriaceae. The type of Enterobacteriaceae will affect how the host is affected. Luckily, some tests can determine the type of Enterobacteriaceae in food and human hosts.

E.coli is the common type of Enterobacteriaceae in food. This type of Enterobacteriaceae in the food limit is 100 per gram and is not detectable in small amounts of less than 3 per gram. E. coli is normally what causes travelers diarrhea, and is usually found in untreated water and unwashed food. Most cases of E. coli are not life-threatening and do not need antibiotics treatment. 

Salmonella is another type of Enterobacteriaceae in food. Salmonella is normally caused by contaminated water and food and can affect both animals and humans. This Enterobacteriaceae is what causes most of the recalls of food in the United States. Nearly all animal products are tested for Enterobacteriaceae, especially salmonella. Even though there is a limit that is safe for this Enterobacteriaceae to be in food, you still should be careful when handling products like raw meat and eggs. Always follow the refrigeration guidelines for these products since there is still a chance of salmonella infection. 

Enterobacteriaceae in food is a part of nature.  However, new tests make it easier than ever to tell if a food has Enterobacteriaceae that are above the limits. Handling food safely is one of the ways that you can lower the chances of spreading Enterobacteriaceae in food and drinks. Many types of Enterobacteriaceae live in food. E. coli and Salmonella are the two most common types of Enterobacteriaceae in food. Knowing how to prepare, cook, and refrigerate food properly will lower your risk of having an Enterobacteriaceae infection.
